Filets de Rouget marinés, poivrons grillés

Red mullet fillets marinated in olive oil and lemon

A fresh and colourful dish to be enjoyed as a starter or a tapas.

Serves: 6 people
Preparation time: 20 minutes
Cooking: no cooking

INGREDIENTS:

12 red mullet fillets
6 sprigs of parsley
1 spoonful of chives
Juice from 1/2 an organic lemon
1/2 a garlic clove
10 soup spoons of olive oil
Salt, pepper and coriander seeds

PREPARATION:

Wash the red mullet fillets, rinse them quickly under water and then dry them with paper towels.
You can ask your fishmonger to prepare the fillets for you.
Wash, dry and chop the parsley and chives.
In a dish (with a little height, like a casserole dish), arrange the fillets, herbs, chopped garlic, lemon juice and olive oil.
Season with salt, pepper and coriander seeds.
Cover with cling film and leave to marinate for 24 hours in a cool place.
Serve the fresh red mullet fillets with grilled vegetables: peppers, tomatoes, courgette, etc.
Tip: For a more exotic flavour, add lime zest and 1/2 tsp of grated fresh ginger to the marinade!
